Pleasant heat and flavor from chipotle peppers and adobo sauce; turkey smell has dissipated but flavor remains; pearl onions and maitake mushrooms provide texture.
The turkey smell has dissipated, and the adobo sauce has significantly improved the flavor and added a reddish hue. The mirepoix is becoming mushy, but the maitake mushrooms are maintaining their texture.
