Mostly mushroom and pepper; peculiar pate aroma is lessened but the bits are still 'gnarly'; salt level is good.
The creator is in a recovery phase after a bad flavor incident with pate. He is using bony meats, mushrooms, and now mirin to balance the profile before an upcoming straining.
